Large-Count Whiteleg Shrimp — Premium Specification Checklist
Reviewed 2026-10-24
Short answer: Premium vannamei is a large, uniform count grade bought on a written specification. State the count basis, presentation, treatment and sulphite declaration, glaze and net weight, and require lot residue tests. CBI notes EU imports are mainly frozen head-on, headless or peeled.

Specification criteria
- Count grade with basis (per lb or per kg) and tolerance for uniformity.
- Presentation: HOSO, HLSO, peeled (PD, PUD, PDTO), raw or cooked.
- Declared treatments (e.g. sulphites, phosphates) and added water.
- Glaze method and percentage; net weight after deglazing.
- Freezing method and cold-chain temperature target.
Buyer fit
- Retail and food-service lines selling on size and consistency.
- Importers needing comparable offers from several origins.
Commercial benefits
- Widely farmed species with broad origin choice.
- Clear specification makes price and quality comparisons fair.
Risks to manage
- Added water above 5% must be named on EU labels; mislabelling is under enforcement focus.
- Sulphite limits by size class in the EU.
- Residue detentions under FDA import alerts.
- Missing EU residue-monitoring approval for the origin country.
Limitations
- No legal 'premium' grade exists — only the contract specification.
- FishMatch does not guarantee availability, size distribution or quality.
Documents to request
- Specification sheet and packing details.
- Lot residue tests from an accredited laboratory.
- Health certificate, establishment approval/registration for the destination.
- Treatment and additive declaration.
Regulatory notes
- EU: exporting countries need an approved residue-monitoring plan; sulphite limits apply.
- EU: Article 118 antimicrobial rules for imports from 3 September 2026.
- US: glaze excluded from net weight; import alerts for residues.
- China: overseas establishment registration (Decree 280).

Comparison
| Point | Premium specification | Standard commodity specification |
|---|---|---|

| Net weight | After deglazing | Often unclear |
Buyer questions
- Is vannamei shrimp ever premium?
- Yes, when bought on a premium specification: large uniform counts, declared treatments, honest net weight and lot documents. The species alone does not make it premium.
