Premium Atlantic Salmon — Grade, Trim and Documentation Criteria
Reviewed 2026-10-24
Short answer: Premium Atlantic salmon means a written grade and trim specification. Standards Norway's NS 9401 and NS 9402 set quality requirements above legal minimums. Define grade, size band, trim, freezing history and net-weight basis in the contract, because trim letters are not universal legal grades.

Specification criteria
- Quality standards NS 9401 (salmon) and NS 9402 (fillets) exceed minimum regulatory quality criteria.
- Historically, Norwegian grading defined 'Superior' as fish without significant defects and 'Ordinary' as fish with minor defects (1984 regulation, historical reference).
- Size band (kg per fish or fillet weight) and product form (whole gutted, fillet, portion).
- Trim definition written out in the contract — trim letters differ between buyers.
- Freezing history (fresh, chilled, frozen) and net-weight basis.
Buyer fit
- Retail, sushi and food-service programmes with strict appearance and fat requirements.
- Buyers comparing offers from several origins on the same specification.
Commercial benefits
- Clear, checkable criteria
- Fewer disputes about trim and defects
Risks to manage
- Unclear trim definitions cause claims and price disputes.
- Temperature abuse in fresh supply chains.
- Origin-specific health and import requirements.
Limitations
- 'Premium' is not a legal grade.
- FishMatch does not verify quality before supplier documents and inspections.
Documents to request
- Specification with grade, size, trim, pin-bone and skin status.
- Health certificate and establishment approval for the destination.
- Temperature records and traceability.
Regulatory notes
- Destination food-safety, labelling and import controls apply.
- Organic claims require separate organic certification — see the Organic collection.
No price ranges are shown because none were sourced for this product. Requirements vary by product and destination; each party remains responsible for the rules that apply to it. FishMatch does not certify products or guarantee compliance.
Comparison
| Point | Premium specification | Standard specification |
|---|---|---|
| Grade | Stated grade with defect tolerances | Unspecified or mixed |
| Trim | Written definition | Letter code only |
| Freezing history | Declared | Often unclear |
Buyer questions
- Are salmon trims A–E standard everywhere?
- No. Trim letters are commercial conventions that differ between buyers. Write out what is removed (bones, fins, belly fat, skin) in the contract.
