Aquaculture Processing Plant Buyer's Guide & Tender Preparation
Processing is where margin is captured. Every extra minute between harvest and chill is money lost. This buyer's guide covers line sizing, chill-and-freeze capacity, HACCP-driven layout, packaging and the tender approach for a bankable processing plant.
1. Design the plant around the product mix
A plant built for headed-and-gutted salmon is not the same plant as one built for HOSO shrimp or IQF tilapia fillet. Decide the primary and secondary product mix at day one — including future SKUs — and design the line, chill chain and packaging around it. Retrofits are expensive and disruptive.
2. Right-size the primary line
Line capacity in fish/hour must handle peak harvest days, not the annual average. Model 120% of peak day with a 20% margin for cleaning and changeovers. Under-sized lines force premium overtime and rework; over-sized lines burn CAPEX and OPEX every day.
3. Chill chain, IQF and blast freezers
Chill capacity of ≤2 hours from harvest to core ≤4°C is a modern standard for fresh product. IQF (individual quick-freeze) tunnel sizing depends on product thickness and target throughput — insist on a heat-transfer calculation, not just capacity in kg/h. Blast freezer redundancy N+1 is a must for export operations.
4. HACCP-driven layout
Raw-clean separation, one-way product flow, dedicated packaging airlocks, controlled personnel flows. This is the layout logic of every plant approved by EU, FDA, China GACC and MEA regulators. Design it in — it cannot be retrofitted cheaply.
5. Packaging strategy
Modified atmosphere packaging (MAP), vacuum, block-frozen carton, IQF retail bag — each has a different line design. Pick the primary format and specify the line accordingly. Leave clear space for a secondary format later.
6. Utilities and yield
Water consumption of 5–15 L/kg finished product is typical. Refrigeration load is the dominant electrical demand — spec ammonia (NH₃) or CO₂ over HFCs for >500 kW plants. Yield tracking to the SKU level is what separates a professional plant from a chronic loss-maker.
7. Tender structure
Split into (i) civil & panels, (ii) primary processing line, (iii) refrigeration package, (iv) packaging line, (v) wastewater. Process line and refrigeration are usually the two heaviest turnkey scopes.
Red flags to stop a tender
- Refrigeration package sold on 'nominal' capacity, not at design ambient
- No yield guarantee tied to product SKU
- Wastewater treatment absent from CAPEX
- No spare parts contract offered
- Layout mixes raw and finished product flows
- No allowance for export-market audits (BRC, IFS, BAP, ASC, MSC)
